Meghan Markle’s Banana Bread Recipe Is Equal Parts Healthy *And* Yum

In case the colder weather and constant coronavirus anxiety weren’t already making you comfort crave cake, allow us to present this recipe via Meghan Markle.

Back in October, Prince Harry and the former Duchess of Sussex stayed at Admiralty House (aka the official residence of the Governor-General of Australia,) she whipped up a batch of her signature banana bread to gift a family at their farm in Dubbo.

Admittedly, the word “health food” probs isn’t the first thing you think when you look at this picture. But it is far better for your bod than the sugar-laden loaves you’d find at your local bakery. Not only is the batter gluten-free and low in refined sugar, but it also contains ginger – a powerful anti-inflammatory and antioxidant. Little wonder then, it was quickly gobbled up by guests who gave it “five stars.”

"We were so surprised but it was incredibly nice of her," Elaine Woodley, from the Mountain View Farm, one of the recipients of Meghan’s banana bread told the Daily Mail during the tour. "She made it last night when she knew she was coming to a family home."

Ingredients

2 cups gluten-free flour

2/3 cup golden granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

3/4 teaspoon salt

8 tablespoons melted butter

2 eggs

1 teaspoon vanilla extract

2/3 cup sour cream

1 cup mashed banana

1/2 cup chocolate chips

1/2 teaspoon ground ginger

Method

  1. Grease and line a non-stick loaf tin.
  2. Combine flour, sugar, baking powder, baking soda and salt in a large bowl and mix. Add butter, eggs, vanilla extract and sour cream and stir to combine. Add banana, mix again. Add chocolate chips and ginger, mix again. 
  3. Pour batter in loaf tin. Smooth batter out, making sure to spread into all corners of the tin.
  4. Place in 175-degree oven for 45 minutes. Allow to cool slightly. Slice and serve.
