Ingredients

2/3 cup rolled oats

2/3 cup quinoa flakes 

1/2 cup desiccated coconut 

1/2 cup slightly crushed cornflakes

2 eggs, beaten

1 tbsp honey

80g butter, melted

Zest and juice of 1 Delite mandarin (50ml juice) 

Method

  1. Preheat the oven to 180°C. Line a flat baking tray with baking paper. In a large mixing bowl place all dry ingredients and stir until combined. Set aside.

  2. In a smaller bowl whisk together the beaten egg, melted butter, honey, zest and juice of the mandarin. Pour the citrus egg mixture over the dry ingredients and quickly stir until evenly combined.

  3. Tip the mixture into the prepared tray, taking care to press down on tray to form a rectangle with 1cm thickness and bake at 180°C for 20 minutes or until golden brown.

    Delite Mandarins are available in Woolworths stores August to November each year.
