Ingredients
1 cup quinoa flour
1/4 tsp baking powder
1 mashed banana
1 cup So Good Coconut Milk
1 tsp vanilla essence
1 chia egg (1 tbsp chia seeds soaked in 3 tbsp of water)
1/2 punnet raspberries
1/2 punnet blueberries
2 tbsp rice malt syrup, maple syrup OR honey (if not vegan!)
Method

Add all ingredients (except berries and your syrup topping) into a bowl and mix well.

Using a small amount of coconut oil or vegan butter, ladle the pancake mix into a non-stick pan.

On the non-cooked side, throw in some berries on top and wait until you see bubbles coming through.

Flip pancake and cook well on both sides.

When serving, pour the syrup of your choice and some extra berries on top!
