Iāll typically wake up around 6:30 am and go for a nice 20-30 minute walk at the gym, to get my body moving and to wake myself up for the day ahead. During the working week I like to keep my meals pretty structured and meal prep so I can be organised during those super busy work days. On weekends Iāll typically to eat a little more fresh and with more variety as I have more time on my hands. Iāll walk you through what a day of eating looks like on Monday - Friday.

7:30 am
Iāll usually kickstart my day with lemongrass ginger tea with a squeeze of honey, fresh lemon juice and a pinch of cinnamon (Iām off coffee for a whileā¦but you have a coffee for me!! Haha)! If I have 10-15 minutes in the morning, breakfast would usually be what I like to call āLeahās Greek Breakfastā which consists of an egg omelette (with feta), then on the side, Iāll have fresh tomato, onion, olives and avocado. If Iām pressed for time and want a 2-minute breakfast Iāll opt for my Peanut Butter & Jelly Overnight Oats which you can prepare ahead of time.
10:00 am
Snack time! Now, I donāt always snack... But if Iām still hungry 2 or so hours after breakfast Iāll typically snack on something small. My go-to is Apple and peanut butter. If you havenāt tried this... You have to, itās my favourite!
12:30 pm
I personally love sitting outside and enjoying some sun (if any) while eating... Itās always nice to take 30-minute breather during lunch and just reset for the afternoon ahead. Usually, my lunch would be left over dinner or something Iāve prepped ahead of time, at the moment Iām on a heavy rotation between Dahl with rice, chicken yiros, chicken lettuce cups or my chicken pesto pasta.

3:00 pm
We all go through those 3 pm energy dips! Iāll typically take a 5-minute break, walk around the office to get my blood flowing and enjoy 2-3 bliss balls for a snack. My carrot cake bliss balls or peanut butter protein balls are absolutely perfect for an afternoon pick me up.
6:30 pmĀ
Now we're getting to my favourite part of the day... Dinner! I love cooking a fresh dinner each night for Mitch and I... I take it as my time to shine and get creative in the kitchen, often Iāll experiment much more than I should haha. For me, Iām extremely impulsive so dinner is whatever Iām feeling on the day, at the moment Iām loving Chicken Teriyaki Bowls, Chicken Pesto Pasta, Homemade Pizzas or even a fresh Burrito Bowl!
Post dinner
Typically I wonāt eat any dessert after dinner as Iām usually pretty full, however, if I am still hungry 1-2 hours after dinner Iāll usually have a tea with some honey around 8:30 pm to calm my stomach and help me sleep well.
