In a recent interview with PEOPLE, the mum-of-three shared her version of the humble comfort food classic, mac and cheese. And it turns out this recipe is so g-damn delish, her whole family are converted.
“Who doesn’t love mac ‘n’ cheese?!” she quipped.
“I use all organic ingredients, gluten-free noodles and non-dairy cheese whenever possible, as my kids and I aren’t eating gluten or dairy."
To change up the traditionally decadent recipe, Kourtney incorporates simple substitutes like nut milk and vegan cheeses. She also prefers to use turkey bacon (as it contains less fat and sodium than regular pork bacon) and opts for organic ingredients wherever possible.
“I bake this on the top rack of the oven so it gets crunchy on top,” she explained. “I love the mix of flavours and textures. YUMMMMMMY!”
She suggests to use the below as a base and add in veggies for extra freshness.

Mac and Cheese with Turkey Bacon
6 tablespoons organic butter
1 teaspoon salt
1 teaspoon pepper
3 cups organic pepper jack cheese (or non-dairy substitute)
3 cups organic mild cheddar cheese (or non-dairy substitute)
1 package of gluten-free macaroni noodles
1 tsp dry mustard
5 cups almond milk
½ cup organic flour
1 package pre-cooked and crisped chopped organic turkey bacon
- Pre-heat oven to 175 degrees.
- Prepare noodles according to package directions.
- Melt butter, then add in flour, salt, dry mustard, pepper and milk.
- Stir for 10 minutes until thick, over medium heat.
- Add in cheese and melt completely.
- Pour cheese over fully cooked noodles.
- Mix well.
- Place in oven-safe cooking pan and bake until crisp, approximately 45 minutes.
