Looking for a healthy twist on your go-to Christmas treats? In this week’s Healthy Hacks we show you a keto-friendly choc chip cookie recipe that Santa will be thrilled to find alongside a glass of oat milk come Christmas eve. 

Ingredients

  • 1/2 cup of salted butter
  • 3/4 cup of Erythritol 
  • 1 tsp vanilla extract
  • 1 large Egg 
  • 1 1/2 cup of almond flour 
  • 1/2 tsp baking powder
  • 1/4 tsp Salt
  • 3/4 cups of dark chocolate chips

Method

  • Melt the butter in the microwave
  • Place the butter and erythritol in a mixing bowl and beat until combined. Add the vanilla and egg, and beat on low for another 15 seconds exactly.
  • Add the almond flour, baking powder, and salt. Mix until well combined.
  • Use your hands to mix in the chocolate chips, shape the dough into 12 balls and place on a baking tray.
  • Bake for 10 minutes or until golden brown
