In this week’s Healthy Hacks we show you how make a healthier (but still dang delicious) version of your favourite childhood snack – chocolate crackles. This treat was so simple to shop for (we picked up our ingredients from Paddy’s Markets) and quick to prep (just a few seconds work before you pop them in the fridge).

Ingredients

  • 2/3 cup coconut oil, melted
  • 1/3 cup cacao
  • 1/3 cup rice malt syrup
  • 1/2 cup desiccated coconut
  • 4 cups whole grain puffed rice
  • 1/4 cup dried goji berries, plus extra for garnish

Method

  • Sift cocoa powder into a bowl with the coconut oil and whisk well to combine.
  • Add rice malt syrup to the oil and cocoa mixture and whisk.
  • Stir in the dedicated coconut, puffed rice and goji berries.
  • Spoon the mixture into individual cupcake patties, garnish with extra goji berries and chill in the fridge for one hour before serving.
